I've just been given a talk talk hub box. But U can't see where the record button is on my remote?

The TV Hub does not record.

TalkTalk no longer provide boxes that record.

So what am I paying £5 for? My old box recorded, what if I miss a programme I want to watch?

You add programmes to your watch list in stead of recording that gives you access to the programme via catch up apps, if available.

Not all channels have catch up though. You can still scroll backwards via the guide by 7 days to select a show. If it has an arrow it's available to watch.
