I am presently on a 150mbps full fibre connection with a Eero 6.

I am being upgraded to Talktalk Fibre 900 plan which comes with two Eero 6 Pro routers/extenders.

Will I be able to use my Eero 6 with the new system to get better coverage which is abysmal at the moment?

I have been sent the new Eeros and my go-live date is tomorrow.

I was also sent a Grandstream Digital Voice adapter; I already have one with my existing set-up!

The eero 6 devices are all compatible. That'll be a nice mesh network for you.
