I'm upgrading to the eero pro 6 router and am currently using the eero 6. Do I have to delete my eero 6 app on my phone and reintstall another version ?

First off, you should never use an eero 6 with a pro 6, because the pro 6 will be reduced to the lower specification of the eero 6. With that in mind, then yes, delete your eero 6 from your network, before adding the pro 6. The app is the same for whatever version of eero, so that will not require uninstallation itself.
