So I have just upgraded to full fibre 500.
have a couple of weeks before Installation

My question Is how do I connect multiple devices Via Ethernet , From what I have seen online there Is only one Ethernet port??

Will I need an Ethernet hub/switch ??

They are added wirelessly using the Eero app and the add device settings.

Essentially yes, you will need an ethernet switch. Have a look here for examples, other retailers are of course available!
