I've cancelled and switched to Youfibre due to higher speeds.

I got an email saying my Talktalk service will end 25/03/25 which is today. 

My new service is due to be installed on 14 April and I'm worried I will be left without connection as I work from home

The switch order shows that the service will transfer on the 14th, So there shouldn't be any loss of service.

If you cancelled directly with TalkTalk then your service will cease on the date stated. I will move this to Billing where it can be more appropriately looked at.
