I'm told that they are planning to fit 'Fibre' to my house, will I still be able to use my Phone [landline] over the new setup , I don't want to lose my 'Boosts'.

If it is Fibre 35/65/150 then you will keep the phone line.
If it is any FUTURE FIBRE product you will not have a phone service unless invited to be part of the VoIP trial.
