I'm trying to set up my account on my Google Pixel 6a phone......
I've gone through the phone setup procedure.
Username
Password
Server - talktalk.net
Type - IMAP
Port - 143
Security - STARTTLS
All this corresponds with my desktop settings
The next operation is 'Validate server settings', but when I do this I just get a return message 'Couldn't open connnection to server'.
Any bright ideas please?

That's absolutely spot on. And that's exactly what you're seeing.
By way of comparison, the default refresh time for TalkTalk Mail webmail via an Internet browser is 5 minutes.
The time delay for emails to appear is between immediate and the refresh time. So the average time delay is 7 and a half minutes for the Gmail app using a sync frequency of 15 minutes. It's 2 and a half minutes for TalkTalk Mail webmail using a 5 minute refresh time.

Ah! Does that mean it can take upto 15 mins for emails to arrive when the app is open? Whereas if I log out and then in again, it immediately checks for emails?

The Gmail app will sync with the online Inbox. There are settings in the Gmail app to Sync email for the account and that must be ticked. The default Sync frequency is every 15 minutes and you can opt to receive notifications when emails arrive.

They were account settings on my desktop.
Ok. With your settings I now have an account which opens with the Gmail icon. Thanks! Please excuse my ignorance. I'm 71 and my brain doesn't work as well as it used to!
Sending is ok, but receiving seems to be not quite right. The desktop receives it immediately, but the mobile doesn't notify me (it is ON) and If the app is already open you have to close it and then open it again to receive. Is that to do with 'sync' which is ON?

The settings you quote are for email software - I don't know where you 'interpreted' those settings from as they're wrong. The incoming mail server will not validate those settings.
The email account type is IMAP
The incoming mail server is: mail.talktalk.net
Port: 993
Security Type: SSL/TLS
For outgoing mail you Require sign in to be ON
The outgoing SMTP mail server is: smtp.talktalk.net
Port: 587
Security type: STARTTLS
