I can see details on the eero site for eero pro 6 (discontinued?) and eero pro 6E. But what is eero pro 6s? Is it a special model for TalkTalk?

I dare say that you have seen posts on here, where I have referred to multiple eero 6 or eero Pro 6 mesh nodes as eero 6s or eero Pro 6s!

The plural of eero 6. To my knowledge, there is not an eero 6s model.

advertising?

The eero 6 and eero Pro 6 are the ones currently provided by TalkTalk. The eero 6 offers two bands, the 2.4 & 5GHz ones. The pro 6 has a third band (3 radios) that supplies one 2.4GHz band & two 5GHz ones. These two are further split into the 5GHz Low & 5GHz High. The Low & high refer to the channel numbers available on each band. The pro 6E is not available via TalkTalk & has the new 6GHz band for WiFi 6E clients, this is still a triband router so the 5GHz High band does not exist, leaving 2.4GHz, 5GHz & 6GHz.
