While I am waiting for my access to Webmail to be restored, I took a look at the “sneak preview of the new TalkTalk Webmail layout” video. Where is the “Compose” or whatever button on the GUI?
Or to pose this query another way. What would I have to do to begin the process of writing an e-mail to someone?

The TalkTalk Support Hub guide offers help with the current email platform and for those users that have been migrated there's the added on advice for them too. In due course the guide will be for new Mail platform users only. But as there are some of us that are still have a mailbox on the 'legacy-apps' platform the guide covers both.
The tips are
Comprehension comes after reading the guide because that's when you are examined on your understanding of what you've read by matching up what you've read with what you see.

So it’s not so much assistance with using the upgraded Webmail GUI as a comprehension examination? Errrrrr.

Just like is often said in examinations... read the full statement before carrying out the instructions.
So if you read the full section you'll see it's the second 3 bullet points that relate to migrated mailboxes.
If you have recently been upgraded then follow these steps;-
From the Mail app, select New email in the menu bar
You'll be able to edit the format of the text, drag and drop attachments and access the signature settings from there
From the Ellipsis menu (the three dots) at the bottom you'll find more functions available to you

I followed that “TalkTalk Mail Support” link. Which led me to:
“WHAT'S NEW IN WEBMAIL?” > “Send a message” > “1. From the Mail app, select Compose in the menu bar”
Which seems to describe a feature that is actually not present in the “upgraded” Webmail GUI. Which is what prompted me to begin this thread.

The (Question mark in a circle) Help icon on the header bar has two useful menu items.
The user guide provided by Open Xchange gives step by step instructions for their email product. TalkTalk Mail has customised configuration options and Open Xchange say that some features may depend on the exact configuration. Therefore don't expect the Open Xchange user guide to describe the TalkTalk configuration options.

I was thinking that “New email” was referring to the content of the Inbox.
Is there anywhere that I can find information about the upgraded Webmail GUI features / controls, other than in that video? - The video seems to be more about accessing other programs through the Webmail GUI than how to manage e-mail with it.

In the Mail app, the envelope icon on the header bar, select the New email button under the header top left.
