Is there a way to disable Wi-Fi on the eero6 so it only works via Wired Ethernet?

You should be as able to, but not being a TT supplied Eero, I have not tested it.

If I bought a Eero 7, can I plug it in and use that instead of the 6 or will it not work?

No, there is very little WiFi configuration exposed to the app.

Ah ok, that’s a shame,

 

Is there a way to hide the network or not broadcast the ID? - so make it a Hidden Network?
