As title suggests. The eero router they gave us only has one usable ethernet port. We would like to get a new one with more ports. How do we go about this? Talktalk aren't offering much help over the phone. Also where is the chat functionality to talk to a member of the team?

You should have posted in the FUTURE FIBRE area.
Network switches can be purchased from numerous retailers.
TT do not supply them.
They may be able to swap the eero for a HUB that has 4 ports
