Wi-Fi unstable

Hi, I have had unstable and intermittent Wi-Fi Internet for a couple of weeks now, Openreach have checked the line and connection, they say it’s good. I have had a new router and software updates etc (sagecom router). It’s Fibre 65 (unfortunately we don’t have a full fibre connection yet). Still I get unstable Wi-Fi, well it says I have a strong signal but still will not connect to the internet and periodically kicks me off the internet and I usually have to reset or use airplane mode (on and off) to reconnect, and the wired TV is also unpredictable. I have tried to get Wi-Fi Optimisation turned off via live chat but unfortunately they don’t understand what that is? I also have a Wi-Fi extender connected upstairs (this seems to work fine and is pretty stable) however it’s on the 2.4ghz channel and all my other devices are on the 5ghz channel, I don’t seem to be able to change that either.
any ideas how to get back to having a stable internet connection would be very helpful, I have never had this before with TalkTalk and I feel like I’m running out of options

I already have a booster for upstairs and that works fine, I have a strong signal on the router too, i’m being told now it’s the underground line coming to the house, even though openreach checked it and said it was ok? Confused totally!
